rosemary & olive oil pita chips with tuscan white bean dip {Winner!!}

Rosemary & Olive Oil Pita Chips with Tuscan White Bean Dip from Tamara:

Ingredients:
  • dried rosemary (not fresh) (I used about 1T)
  • extra virgin olive oil (I used about 1/2 cup)
  • 15 ounce can of drained and rinsed cannellini beans
  • 1/4 cup fresh Italian parsley
  • 2T fresh lemon juice along with and the grated lemon peel of one lemon
  • 1 garlic clove
  • 1/3 cup of olive oil
  • Salt and pepper to taste
1.  Soak some dried rosemary in a bowl of extra virgin olive oil.  This mixture is used for brushing on the pitas.  Let this soak for at least an hour.
2.  Blend beans, parsley, lemon juice & grated lemon peel, garlic, salt and pepper (to taste) in food processor.  Drizzle 1/3 cup of olive oil in a constant stream while blending.  Blend until creamy and smooth.
3.  For the pita chips, buy a bag of fresh pitas.  Cut each pita into long strips - 8 per pita (I used a pizza cutter) Snip the tips off (with kitchen shears) each strip to square them off and separate.  After separation you should have around 16 individual chips then per pita. Brush each strip with the rosemary olive oil mixture on the rough side of the pita, the inner side, place on a baking sheet, sprinkle with kosher salt and bake in a 400F oven for about 7-8 minutes, or until golden brown. Let them cool on a rack.   If you want to make them ahead and store them, place in a cookie tin between sheets of wax paper. They will stay crunchy and delicious for up to 3 weeks!

slow cooker tomato basil parmesan soup {winner!}

Slow Cooker Tomato Basil Parmesan Soup from Tamara:

2 (14 oz) cans S & W Italian Recipe diced tomatoes, with juice
1 cup finely diced celery
1 cup finely diced carrots
1 cup finely diced onions
1 tsp dried oregano or 1 T fresh oregano
1/4 cup fresh basil
4 cups chicken broth
1/2 bay leaf
1/2 cup flour
1 cup grated Parmesan cheese (make sure to use freshly grated, not powdered)
garnish (optional)
1/2 cup butter
2 cups half and half, warmed (substitute milk for less calories)
Kosher salt, to taste
Pepper, to taste

Add tomatoes, celery, carrots, chicken broth, onions, oregano, basil and bay leaf to a large slow cooker.  **If putting in crock pot less than 7-8 hours, sauté celery, carrots and onions until slightly soft before putting in the slow cooker.

Cover and cook on LOW 5-7 hours, until flavors are blended and vegetables are soft. At this point I used a hand immersion blender to blend vegetables to a smooth texture. (You can also transfer to a blender in batches) If you prefer a chunkier texture you can leave it as is or even blend just some of it. Return to blended vegetables back to the slow cooker.

About 40 minutes before serving prepare the roux. Melt butter over low heat in a skillet and add the flour. Stir roux constantly with a whisk for 5-7 minutes. Slowly whisk in 1 cup hot soup. Add another 3 cups and stir until smooth. Add all back into the slow cooker. Stir and add the Parmesan cheese, warmed half and half, salt and pepper.

Cover and cook on LOW for another 30 minutes or so until ready to serve.

Serve with additional grated Parmesan, if desired.

**If you blend soup smooth with blender, you can make a healthier version by cutting roux in half as the blended vegetables help create a thicker texture.

butter beer cupcakes.

Butter Beer Cupcakes from Tamara:
book: Harry Potter

Adapted from Amy Bites
Yields 18 cupcakes

Butterbeer Cupcakes
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
Pinch of salt
1/2 cup (1 stick) unsalted butter, softened
1 cup dark brown sugar, packed
3 large eggs
2 teaspoons vanilla extract
1 teaspoon butter flavoring
1/2 cup buttermilk
1/2 cup cream soda

Preheat oven to 350 degrees F (175 degrees C). Line a cupcake tin with baking cups.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat together the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract and butter flavoring.
Fold in 1/3 of the flour mixture, then the buttermilk, 1/3 of the flour mixture, cream soda, and then the remaining flour. Folding in these ingredients will prevent over-mixing and will result in a fluffier, less dense cupcake. Fill cupcake liners 3/4 of the way full and bake for 15-18 minutes, or until the cupcakes are golden and spring back when touched. Cool completely before frosting.

Butterscotch Ganache
11 ounces (1 package) butterscotch chips
1 cup heavy cream

In a small saucepan on medium heat, melt the butterscotch chips into the heavy cream, stirring until smooth. Remove from heat and cool to room temperature before using.

Butterscotch Buttercream
6 tablespoons unsalted butter, softened
1/4 cup butterscotch ganache (recipe above)
1 teaspoon vanilla
1 teaspoon butter flavoring
Pinch of salt
3-3 1/2 cups powdered sugar
Splash of heavy cream (as needed)

In a large mixing bowl, beat the butter until light and fluffy. Mix in the butterscotch ganache, vanilla, butter flavoring, and salt. Beat in the powdered sugar for 2-3 minutes, starting with 3 cups and adding more only if necessary. Add the cream a tablespoon at a time until desired consistency is achieved (I only needed 1 tablespoon).

To Assemble
Pour butterscotch ganache into a plastic squeeze bottle. Stab the tip of the bottle into cupcake and fill each cupcake with butterscotch ganache until it starts to overflow.

Fill a pastry bag with butterscotch buttercream and pipe onto the top of each cupcake. Drizzle on the butterscotch ganache. If you have any leftover butterscotch ganache, it can be used as ice cream topping.

roasted pears with brie and pistachios.

Roasted Pears with Brie and Pistachios from Tamara:

Ingredients
  • 2 tablespoons honey mustard
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 2 ripe pears, preferably Bosc
  • 2 ounces Brie cheese, cut into 4 slices
  • 4 teaspoons chopped pistachios, toasted (see Tip)
Preparation
  1. Preheat oven to 425°F. Coat an 8-inch-square (or similar-size) metal baking pan with cooking spray.
  2. Whisk mustard, oil, lemon juice, salt and pepper in a small bowl.
  3. Cut pears in half lengthwise, hollow out the core and slice a small piece off the other side so they will lie flat when served. Brush all over with the mustard glaze and place cored-side down in the prepared pan.
  4. Bake the pears for 30 minutes, basting halfway through with the glaze. Gently turn them over, baste again and place a piece of Brie in the hollow of each pear. Bake until the pears are tender and the Brie is slightly softened, 3 to 5 minutes. Sprinkle each pear half with 1 teaspoon pistachios.
Tips & Notes
  • Tip: To toast seeds and chopped, small or sliced nuts (pages 30, 40, 63), cook in a small dry skillet over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes.

*Tamara used candied pecans instead of pistachios.

salted caramel chocolate shortbread bars.

Salted Caramel Chocolate Shortbread Bars from Tamara:

For the shortbread layer:
2 cups all-purpose flour
2 tsp. baking powder
1/4 tsp salt
1 cup (2 sticks) unsalted butter, at room temperature
1/2 cup sugar

For the caramel layer:
1 cup (2 sticks) unsalted butter, cut into pieces
1 cup sugar
4 T light corn syrup
2 (14 oz) cans sweetened condensed milk

For the chocolate layer:
8 oz. semisweet or bittersweet chocolate, finely chopped
1 tsp. light corn syrup
1/2 cup (1 stick) unsalted butter, cut into pieces
Fleur de sel or sea salt, for sprinkling

Preheat oven to 325. Line 9x13 pan with parchment paper. In small bowl combine flour, baking powder and salt. Stir with fork to blend and set aside. In a bowl of an electric mixer, beat the butter and sugar on medium speed until well blended, about 1-2 minutes. With the mixer on low speed blend in the dry ingredients just until incorporated. Transfer the dough to the prepared baking pan and pressi n an even layer over the bottom of the pan. Bake 15-18 minutes or until golden. (If the crust puffs up a bit while baking, just gently press it down while it is cooling.) Transfer the pan to wire rack and let cool completely.

To make caramel, combine butter, sugar, corn syrup and condensed milk in a medium saucepan over medium heat. Heat, stirring occasionally, until the butter is melted. Increase the heat to medium-high and bring to a boil. Reduce the heat to maintain a simmer, stirring constantly. Continue simmering and stirring until the mixture turns an amber color and thickens slightly. Pour the mixture over the shortbread layer, smooth the top, and allow to cool completely and set. (you can chill at this stage to ensure the caramel won't melt when the warm chocolate is added).

To make the chocolate glaze, combine chocolate, corn syrup and butter in a heatproof bowl set over a pan of simmering water. Heat, stirring occasionally, until the chocolate is completely melted and mixture is smooth. Pour evenly over the caramel layer and use an offset spatula to smooth the top. Allow to cool for a minute or two and then sprinkle with fleur de sel. Chill, covered, until ready to slice and serve.

baked brie.

Baked Brie from Tamara:

1 large wheel of brie (Costco size - 16 ounce)

1 cup brown sugar
1/2 cup pure maple syrup

1. Preheat oven to 400 degrees.

Serve with crackers, baguette slices, apples, pears, gingersnaps…

**option - If you want to use a smaller brie wheel, just halve or reduce syrup/brown sugar mixture.
