m&m cookie bars. {winner!}


M&M Cookie Bars from Lori:

2/3 cups sugar
2 tsp vanilla
1 1/2 cups brown sugar
4 cups flour
1 1/2 cups butter
1 tsp salt
2 eggs
1 bag chocolate chips
1 tsp baking soda overflowing
1 small bag M&M's

-Mix sugars and butter
-Add eggs and vanilla
-Mix flour, salt and baking soda, then add to wet mixture
-Add chocolate chips
-Press dough into cookie sheet
-Press M&M's into dough
-Bake at 350 degrees for 20-30 minutes

Santa Fe Chocolate Chip Cookies from Melanie:

3/4 cup unsalted butter, room temperature, 1 1/2 sticks
3/4 cup dark brown sugar, firmly packed
2/3 cup powdered sugar
1 large egg
1 tsp vanilla extract
2 1/2 cups flour
1/2 tsp cinnamon
1 tsp baking soda
1 tsp salt
2 cups milk chocolate or semisweet chocolate chips
1 cup chopped pecans
1/2 cup toasted pine nuts

Cream butter and sugars until light and fluffy. Beat in egg and vanilla. Sift flour, baking soda, cinnamon and salt in another bowl. Slowly add flour mixture to butter mixture and beat until blended. Stir in chocolate chips, pecans and pine nuts.

Put 2 sheets plastic wrap on work surface.  Spoon half of dough into a 12 inch strip  down center or each plastic sheet. Form each dough strip into a 12 inch log. Wrap the plastic and refrigerate 1 hour. Dough can be prepared up to 3 days ahead and kept refrigerated.

 Preheat oven to 325. Using a sharp knife, cut chilled cookie dough into 1/4 inch slices. Place dough on large baking sheets. Bake until cookies are light golden brown, about 14 minutes. Remove cookies from baking sheets. Transfer to wire racks to cool completely. Store in airtight container. Makes 3 1/2 dozen cookies.

Milk Chocolate Chip Cookies from Beckie:

1 cup sugar
1 cup brown sugar
1 cup softened butter
2 eggs
1 - 12 oz bag milk chocolate chips
1 tsp vanilla
3 cups flour
1 tsp baking soda
1 tsp salt

Cream sugar, brown sugar and butter. Add eggs and vanilla and whip until fluffy. Combine flour, baking soda and salt before adding wet ingredients. Add chips (if doubled, add 3 cups chips). Form dough into balls, place on cookie sheet and bake at 350 degrees for 9-11 minutes. Let sit on cookie sheet 1-2 minutes after removing from oven and then cool completely. Makes about 3 dozen cookies.

Oatmeal Chocolate Chip Cookies from Kelly:

1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 tsp vanilla extract
3 cups quick-cooking oats
1 1/2 cups all-purpose flour
1 package (3.4 ounce) instant vanilla pudding
1 tsp baking soda
1 tsp salt
2 cups (12 ounces) semisweet chocolate chips
1 cup chopped nuts

In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the oats, flour, dry pudding mix, baking soda and salt; gradually add to creamed mixture and mix well. Stir in chocolate chips and nuts. Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 375 for 10-12 minutes or until lightly browned. Remove to wire racks.

Peanut Butter Chocolate Chip Cookies from Jenn:

1/2 cup (1 stick) butter, softened
1/2 cup chunky or smooth peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, firmly packed
1 egg
1 1/3 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup mini semisweet chocolate chips

Preheat oven to 375.

Cream the butter, peanut butter and sugars until light. Add the egg and mix until fluffy. Blend the flour, baking powder, soda and salt together well. Add these dry ingredients to the butter mixture. Add the chocolate chips.

Drop cookie dough by teaspoonfuls onto lightly greased baking sheets. Bake for 9-10 minutes at 375.

Mix together:
4 cubes butter
2 cups brown sugar
2 cups sugar
4 eggs
2 tsp vanilla

Then add:
1 tsp salt
2 tsp baking powder
2 tsp baking soda
4 cups flour
5 cups oatmeal *blend first, then measure
1 bag milk chocolate chips

Bake at 350 for 10 minutes.

Chocolate Chip Cookies from Lauren:

1 cup soft butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1 tsp baking powder
1 tsp baking soda
3 cups flour

Cream the butter and sugars for 5 minutes. Add eggs and vanilla; mix for 5 more minutes. Add dry ingredients and mix. Add chips. Bake for 9-12 minutes at 350 until light brown spots appear on top of cookies. Remove pan from oven and allow cookies to rest for a few minutes on pan, where they will continue to absorb heat and cook a bit more. Remove cookies from pan after about 10 minutes.

Chocolate Chip Cookies from Brittany:

1 cup butter
1 cup brown sugar
1/2 cup sugar
2 eggs (room temperature if possible)
1 tsp pure vanilla
3 cups flour
1 tsp baking soda
3/4 tsp salt
1 1/2 cups semi sweet chocolate chips

Cream butter, brown sugar and white sugar together in a mixer. Then add the eggs, one at a time. Beat until creamy. Add the vanilla.

In another bowl mix the dry ingredients together before slowly adding them to the creamed mixture. When combined, add chocolate chips. Mix up and then drop by teaspoonful onto cookie sheet.

Bake at 350 degrees for 8 minutes. Cool on wire rack.

Chocolate Chip Cookies from Erin:

1 1/2 cups granulated sugar
2 cups packed brown sugar
1 lb butter or 1 cup Crisco and 2 cubes margarine
6 cups flour
3 eggs
2 T vanilla
1 1/2 tsp soda
1 1/2 tsp salt

Add 1 large (12 oz) package chocolate chips or 3 cups raisins (soak in boiling water for 30 minutes) or 2 cups nuts or 1 1/2 cups oatmeal.

Cream Crisco and margarine together. Add sugars and mix well. Add eggs; mix well. Add salt, soda and flour 2 cups at a time, then vanilla and chocolate chips.

Betty Crocker Chocolate Chip Cookies from Michelle:

My days are spent in near constant attempts at talking myself out of making these. When I fail, I usually double the recipe and freeze most of them to be pulled out and thawed a few at a time every free hours over the next week or so in order to fully satisfy my cookie craving. That quiets the monster within for a while until I eventually surrender again.

3/4 cup brown sugar
3/4 cup sugar
1 cup (2 sticks) butter at room temperature
1 egg
2 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
1ish cup chocolate chips

Cream buyer with sugars. Add egg. Add soda, salt and flour (one cup at a time). Add chocolate chips. Eat as much dough as you feel appropriate. Then form into balls (I like the size that the Pampered Chef small cookie scoop makes because then I can eat more cookies). For small cookies bake for 8 minutes. If you make bigger cookies, bake them longer.
